Ginger Simple Syrup

1 cup water

2 cup sugar

1 large piece ginger, peeled and cut into thin slices

 

In a small non-reactive sauce pan, bring the water, ginger and sugar to a simmer. Cook just until the sugar has dissolved. Turn off the heat and allow the syrup to cool completely. Store covered in the refrigerator for up to 2 weeks. Our guess is that it won't last that long.
